Ingredients
- 1 tablespoon olive oil
- 1 clove of garlic minced
- ½ inch of ginger grated
- 1 cup long-grain white rice
- 2 cups low-sodium vegetable broth
- 1, 15 oz can low sodium red beans
- ½ bunch cilantro, roughly chopped
- For the coconut cream
- 1 can creme de coco
- 1 ripe avocado
- Juice of one lime
- ½ tsp garlic powder
- Black pepper to taste
- ⅛ teaspoon flaky salt for finishing (optional)
Directions
- Add olive oil to a heavy-bottomed stock pot, add garlic and ginger, turn flame to medium and saute for 3 minutes.
- Add rice and vegetable broth, cook for 20 min
- Meanwhile, prepare the coconut avocado cream
- Place all ingredients in a food processor or blender and blend until smooth, set aside
- Add canned beans and cilantro and cook for an additional 3-5 minutes
- Plate beans and rice, garnish with avocado cream and your favorite pepper sauce!
