Ready in under 30 minutes, this delicious Estonian Raspberry Mousse features just six ingredients and is a perfect start or ending to your Valentine’s Day meal.

Estonian Raspberry Mousse
Serves: 4
Total Time: 25 minutes
Ingredients
1 cup of frozen mixed berries
4 cups of water
3/4 cup cream of wheat
1 tsp vanilla extract
Zest of 1 lemon
2 tablespoons of pomegranate syrup
Directions
1. In a high-speed blender, combine the frozen berries and water for 1 minute, 30 seconds.
2. Transfer to the stove and place in a stock pot. Bring to a boil.
3. Pour the cream of wheat quickly into the boiling juice, stirring vigorously to avoid any clumps. Simmer over low heat for 15 minutes, stirring regularly, or until the cream of wheat has expanded and you have a thick, sweet porridge. Add the vanilla.
4. Pour into a large bowl and let cool.
5. Top each serving with a generous drizzle of the pomegranate syrup and some lemon zest.
6. Serve immediately and enjoy!
