Ingredients

  • 1 tablespoon olive oil
  • 1 clove of garlic minced
  • ½ inch of ginger grated
  • 1 cup long-grain white rice
  • 2 cups low-sodium vegetable broth
  • 1, 15 oz can low sodium red beans
  • ½ bunch cilantro, roughly chopped
  • For the coconut cream
  • 1 can creme de coco
  • 1 ripe avocado
  • Juice of one lime
  • ½ tsp garlic powder
  • Black pepper to taste
  • ⅛ teaspoon flaky salt for finishing (optional)

Directions

  • Add olive oil to a heavy-bottomed stock pot, add garlic and ginger, turn flame to medium and saute for 3 minutes.221025_Maya_00094_WL

  • Meanwhile, prepare the coconut avocado cream 221025_Maya_00075_WL
  • Place all ingredients in a food processor or blender and blend until smooth, set aside221025_Maya_00161_WL
  • Add canned beans and cilantro and cook for an additional 3-5 minutes 221025_Maya_00277_WL
