One pot red beans with cilantro rice and coconut avocado cream

Ingredients
1 tablespoon olive oil
1 clove of garlic minced
½ inch of ginger grated
1 cup long-grain white rice
2 cups low-sodium vegetable broth
1, 15 oz can low sodium red beans
½ bunch cilantro, roughly chopped
For the coconut cream
1 can creme de coco
1 ripe avocado
Juice of one lime
½ tsp garlic powder
Black pepper to taste
⅛ teaspoon flaky salt for finishing (optional)
Directions
Add olive oil to a heavy-bottomed stock pot, add garlic and ginger, turn flame to medium and saute for 3 minutes.
Add rice and vegetable broth, cook for 20 min
Meanwhile, prepare the coconut avocado cream
Place all ingredients in a food processor or blender and blend until smooth, set aside
Add canned beans and cilantro and cook for an additional 3-5 minutes
Plate beans and rice, garnish with avocado cream and your favorite pepper sauce!
