Spooky Halloween Punch
Serves: 4-5
Time: 10 minutes
Ingredients
10 rambutan
10 blueberries
16 ounces frozen red berry mix (raspberries, strawberries, or mixed berries)
½ cup unsweetened 100% cranberry juice
½ cup pomegranate juice
1 liter seltzer water or club soda
Directions
1. Prepare the “eyes” by making two arc cuts lengthwise facing each other through just the skin of the rambutan. Peel away this portion of the skin leaving a wedge of the rambutan fruit visible.
2. In the center of this visible fruit, use a small paring knife or spoon to dig out a small piece, leaving a divot. Place the blueberry in the divot. It should look like an open eyeball. Set aside.
3. Blend the frozen berries with the juices.
4. Pour into a shallow punch bowl and place the rambutan “eyes” on top so they float.
5. Ladle punch with an eye into a glass and top with seltzer water or club soda.
