Heavenly! Honey Bilberry Greek Yogurt Popsicles
In the Northeastern part of the United States we are experiencing heat wave after heatwave and are all looking for ways to stay cool.
We recently had Chef Ki as a Chef intern at Maya Feller Nutrition. She developed a delicious Honey Bilberry Greek Yogurt Popsicle recipe for us. Perfect for summer days.
In this recipe bilberry is the star. They are also known as European blueberries and have a distinct deep blue color. They are more common in Northern Europe and Asia however can be found in their dried form online. Bilberries are a great addition to dishes as they are a rich source of antioxidants and polyphenols that support a healthy lipid profile and also aid in lowering total cholesterol, LDL, and triglycerides and raising HDL levels.
Honey Bilberry Greek Yogurt Popsicles
Ingredients
3 tablespoons honey
1 (4oz) dried bilberry package
2 cups plain full fat Greek yogurt
2 ½ teaspoons vanilla extract
Pinch of kosher salt
Directions:
- Add half of the Greek yogurt to mixing bowl with half of the honey and gently mix together. Set aside.
- In a blender, add the rest of the Greek yogurt, bilberries, pinch of salt, vanilla and rest of the honey. Blend on the highest speed until well combined.
- Add bilberry mixture to bowl with Greek yogurt and gently mix together. If you want a tie-dye look, don’t blend the yogurt with the berries. If mixture isn’t sweet enough for you, add more honey to taste.
- Pour bilberry mixture into popsicle molds.
- Freeze for 6 hours in freezer or as long as overnight.
- Run the popsicle mold under warm water to remove.
- Enjoy!
The best part of this recipe is that you don’t have to turn on your stove!
