Pineapple-Peanut Nice Cream

This nutty nice cream is for the ice cream lovers.  In order to get a soft serve-like consistency, ensure your pineapple is frozen.  The combination of the nut butter with the fruit will slow down the absorption of the fruit sugars into your bloodstream, producing less of a rapid spike.

Serves 6 (1/2 cup each)

Ingredients:

2 cups frozen pineapple

1 cup peanut butter (no added sugar, salt or fat)

1/2 cup unsweetened almond milk

  1. In a blender or food processor, combine the frozen pineapple and peanut butter and process
  2. Add the almond milk and blend until smooth.  The result should be a smooth paste.

Substitution tip:  Use any frozen fruit of your choice instead of pineapple and any nut butter you like.  Just be sure to read the ingredient labels and find nut butters that are additive-free.
